Ingredients

  • 7 eggs, whisked - Woolworths, Aldi or Coles
  • 2 Tbsp olive oil - Woolworths, Aldi or Coles
  • 450g of brown rice measure by cup - Woolworths, Aldi or Coles
  • 2 cups English spinach leaves, roughly chopped - Morley Fresh
  • 3 cups grated pumpkin - Morley Fresh
  • 1/2 cup sunflower seeds - Woolworths, Aldi or Coles
  • 150g haloumi grated -- Woolworths, Aldi or Coles
  • 2 tablespoon wholegrain mustard- Woolworths, Aldi or Coles
  • Salt and pepper to taste
  • 2/3 cup grated cheese - Woolworths, Aldi or Coles

Method

Preheat oven to 180°C

Combine all ingredients, except the grated cheese, in a mixing bowl and stir well to combine.

Pour mix into an oiled 27cm round ceramic quiche dish.

Top with grated cheese and bake at for 30 minutes until egg is set and the tart is golden on top. 

Serve with dressed greens.

Cook’s Notes

Try using left over cooked rice or grab a pack of pre cooked rice to keep this recipe speedy.

A great option for lunchboxes the next day.

This recipe is tried and true after hitting the table at my house on many an occasion. Use the base recipe and mix up the inclusions! You could swap out the pumpkin and spinach for chopped broccoli and roasted sweet potato or green peas, corn and grated carrot.

Choose seasonal ingredients as they are usually cheap and plentiful and make sure you pack in plenty of veggies.
